Why Buy Toys?!

If you are a parent, or around kids you know this saying to be true: "They always have more fun with the box then the actual toy". Ha! So, today Natalie showed me how to have VERY cheap (to her) fun! Lol. 

So, tonight for dinner I made Stuffed Green Bell Peppers, Potato Soup and Italian Bread... LOTS of carbs I know! I didn't think we were gonna do the soup, but when I came home from the store, Ryan wanted both still! So we did! The bell peppers are soooo good! 
Awhile ago I made up this recipe (I am SURE someone else has done it also!) I cut off the top of the peppers and scoop out the insides and put a little olive oil on them and pop them in the oven on about 300 degrees. While that's cooking I cook a cup of rice to about 3 cups of chicken broth(I like my rice soft) and grill up and season some chicken. When the rice is done, I put about 3/4 of a cube of cream cheese, bacon bits and your cooked chicken(juice and all) in with it and stir it all up. Take out your peppers and put the mixed rice in it. Sprinkle with Feta cheese(tonight we put bread crumbs on it too-ha! More carbs!) and put it back in the oven until the Feta starts to turn brown. Finito! Sooo yummy!

To make dinner it took me about an hour or so. The WHOLE time I was cooking, Natalie was in the living room playing with 2 grocery bags and our dehumidifier.... Yes, the whole hour! Laughing and having the time of her life!

That dehumidifier has been a "trailer saver" though! We empty out about 10 cups of water everyday!! Not even exaggerating!

Brooklyn's 1st Birthday!

Wow! I can't believe it's been a whole YEAR! Brooklyn is walking all over the place now! She loves it! In mid walk she will just burst out laughing! Ha! She gets a kick out of it! 

She had a great time at her birthday party, despite missing her nap! Surprisingly! (I think the cake helped! lol)

Yummy Chicken Cheese Chowder!

So, tonight I made a YUMMY dinner! 
Chicken Cheese Chowder.
Soooooooo good!! My favorite soup!

Here is the recipe:

Chicken Cheese Chowder

Prep Time: 18 mins
Cook Time: 20 mins
Makes 6 servings

2 tablespoons margarine or
butter
I small onion, finely
chopped (1/4 cup)
I 1/2 teaspoons ground
cumin
1/2 pound boneless, skinless chicken breasts, cut into I-inch pieces
2 large sweet potatoes, peeled and cut into I-inch pieces
I can (14 1/2 ounces) ready
to-serve chicken broth 1/2 cup whipping (heavy) cream
2 teaspoons chili powder
114 teaspoon salt
I can (16 ounces) cream
style corn
I can (4 ounces) chopped green chilies, drained I cup shredded Monterey
Jack cheese (4 ounces) Chopped fresh cilantro, if desired


Melt margarine in Dutch oven over medium heat. Cook onion, cumin and chicken in margarine 8 to 10 minutes, stirring occasionally, until chicken is no longer pink in center.
Stir in sweet potatoes and broth. Heat to boiling; reduce heat to low. Cover and simmer about 8 minutes or until potatoes are tender.
Stir in remaining ingredients except cheese and cilantro; cook until hot. Gradually stir in cheese just until melted. Sprinkle each serving with cilantro. 





I only used one of these... I think I picked really big ones! :)



Then I made a really nice salad to go with it with cucumber, chives, carrots, cheese and bacon bits.

Growing up!

Well, today our little (littlest) girl WALKED!! 
Not like just a few steps... she has been taking 1-2 steps lately... 
No, today she took 13 STEPS!! 
All by herself!! 
No coaxing, nothing! 
Thankfully, I had my phone camera videoing the girls dancing and such to Veggie Tales Sing Along and caught it on video!! YAY!! 
We have been waiting for this day!! 
Natalie walked at 10 1/2 months, so I kinda figured Brooklyn would walk early to... 
she waited until 11 2/3 months! Lol :)
 My baby girl is growing up!! 
In 10 days it will be her FIRST birthday!! 

Well, just thought I would share my great news!!

Hmmm...

Hello.

It has been a while since I last blogged.
Working has been alot of fun, but kinda hecktic.
I love working again, and I love where I work.
I am by myself alot at work while it is the "slow season", which is nice.
Alone time.
I am working part time hours, but 5 days a week.
Kinna hard.
I close most nights.
At least I still get to see Ryan.
Our schedules work out perfectly.
He is working for the school district driving busses for now and so he has a morning route, then gets to come home from like 9-1 before he goes back for the afternoon route.
So we actually get to see eachother every morning!
Otherwise we would have opposite schedules.
We knew that going into it.
But that worked for us with watching the kids.
I miss being a stay-at-home mommy.
I haven't done any dehydrating since I started working... well once, when I was like "Ahhh! I need to dehydrate SOMEthing!" lol.
Apples. :)
It is nice feeling like I am helping out with our savings, but hard being away soo much from the girls and my husband.
Being used to being home all day everyday, to working 5 nights a week...
I am kinna up and down about it.
I love going to work, but I miss staying at home! :(
Hmmm...
It's only been 2 weeks, maybe I will get used to it?

Working Mom

So, today I started working again. Like a real "outside of the home" job. I know being a mom is a real job, and my favorite one at that. But the goal of living in this trailer is to pay cash for some land and a place of our own! So, we figured if I work, we can save a lot more! 
I'm excited about working again. It has been over 3 years since I worked. The last time I worked I was 6 months pregnant with Natalie. 
I got a job at a tanning salon. (Free tanning... YAY! lol). I figured since my income will just be extra savings, that I really didn't want to work at a job that I will dread going to work everyday at. I wanted a fun place to work. Somewhere to get away from the small space we live in and help us work towards out goal. And plus, we won't have that silly little extra bill every month called a "tanning package"! lol. 
Today I worked a 4 hour shift. It was pretty simple. A lot of information, but most of it will just come as I work and get used to the routine. I have to learn about all the tanning lotions and what they do and how the accelerate your tan and such. So I guess I will have to try them out! ;) 
The place I work is much better then some of the tanning salons out there with the really orange girl there who doesn't know the meaning of  "customer service". Or that tanning and looking good is the only thing in life worth living for and "Ugh! I can't wait to be done with my shift, so I can go tanning again and get another shade orange-er." 
Thank GOD!
No, the place I work is the one all the nice people go to... well mostly. Because they love the customer service and all the girls there are nice and helpful. And we are not all about getting you and ourselves orange, we are about getting you and ourselves a nice shade of brown and making sure you don't burn in the sun and look good while you are out, but don't worry, that's not what life is all about! :) 
So, all that to say, I am very excited about working again! Although, I can't wait for the day to be a stay at home mom for good, I am willing to help out the process of getting our own place just a bit sooner! It will be worth it in the end!

Levenworth

We had a wedding to go to in Levenworth yesterday. It was a beautiful day which made the drive very enjoyable! 
 We put the little ones in my in-laws car and we took Katie and Ryan's friend Mark in our car.

We had a really good time there! It was really hot! (well, for us Western Washingtonians) 
It was 90 degrees for the day! 
After the wedding we walked around town for a little, while the men went rattle snake hunting! 
Great day!

Well, since it is 82 degrees out now, I think I will go make myself a smoothie!
